Freshly roasted Ometepe coffee grown and specially processed by the Flores family. Ometepe coffee growers usually remove the coffee berry fruit and wash the seeds before drying them in the sun. But for this coffee, the Flores family didn’t wash away the golden, sticky musilage — which looks like honey. Besides being easier on the environment, since no water is needed, leaving this coating on while the beans dried resulted in coffee with a distinctly different, very appealing taste.
